Recipe: old-fashioned oatmeal bread

Old-Fashioned Oatmeal Bread
1 3/4 cups boiling water
1 cup rolled (quick-cooking) oats
5 1/3 tablespoons (2/3 stick) butter
1/2 cup table molasses (golden, barrel)
1 tablespoon salt
2 packages dry yeast
1/4 cup lukewarm water
Pinch of granulated sugar
2 large eggs, lightly beaten
6 cups sifted all-purpose flour

Combine boiling water, rolled oats, butter, molasses and salt in a large mixing bowl. Cool to lukewarm. While cooling, proof the yeast by adding it to the lukewarm water with the sugar. If it foams, it is active. Add to the lukewarm oat mixture and blend well. Gradually stir in the eggs and flour. The dough will be stickier than regular bread dough. Pour into a greased bowl, cover with a damp cloth and place in the refrigerator for at least 2 hours or until needed.

Remove the chilled dough and knead about 2 minutes to remove air bubbles. Divide into two and shape into loaves on a well-floured surface.

Generously grease two loaf pans and sprinkle extra rolled oats around their bottoms and sides. Place the loaves into the greased pans. Cover with a damp cloth and let rise in a warm, draft-free place until double in bulk, approximately 2 hours.

Bake in a preheated 375 degree F oven for 45 to 50 minutes or until done. The bread should pull away from the sides of the pan. Remove from pans at once and serve warm.

Coconut Praline Coffee Cake

2/3 cup evaporated milk
3/4 cup granulated sugar
1/2 teaspoon salt
2 eggs
3/4 cup soft butter
Sifted all-purpose flour
2 packages dry yeast
1/2 cup warm water
2/3 cup firmly packed light brown sugar
2/3 cup flaked coconut
Praline Frosting

Place the evaporated milk, sugar, salt and eggs in large bowl of electric mixer and beat until mixed. Add 1/2 cup butter and 2 cups flour and beat with mixer until smooth.

Dissolve the yeast in warm water. Add with 1 cup flour to the milk mixture and beat at medium speed for 3 minutes. Stir in 2 cups flour and cover. Let rise for about 1 hour and 30 minutes or until doubled in bulk.

Punch down. Turn out onto a well-floured pastry cloth or board and knead lightly. Roll out into a 10 x 15-inch rectangle.

Mix remaining butter, brown sugar, 2 tablespoons flour and coconut and spread on the dough. Roll from long side as for a jellyroll and place, seam side down, in a greased 10-inch tube pan. Press ends together to seal, then cover. Let rise for about 1 hours or until doubled in bulk.

Bake at 350 degrees F for 45 minutes and remove from pan. Frost with Praline Frosting while warm. Decorate with pecan halves, if desired.

Praline Frosting
1/4 cup firmly packed brown sugar
2 tablespoons evaporated milk
2 tablespoons melted butter
1 cup unsifted confectioners’ sugar

Combine the brown sugar, evaporated milk and butter in a bowl. Add the confectioners’ sugar and beat until smooth.

Recipe: moroccan hanukkah doughnuts

Moroccan Hanukkah Doughnuts

2 envelopes active dry yeast
1/4 cup granulated sugar
1/2 cup warm water
4 cups all-purpose flour
1/2 teaspoon salt
2 lightly beaten eggs
Grated zest of 1 orange (optional)
1/4 cup canola oil (optional) or melted margarine or unsalted butter
1 1/2 to 2 cups warm water or part water part orange juice
Peanut or canola oil for deep-frying
Granulated sugar for sprinkling or warm honey for dipping

Dissolve yeast and sugar in 1/2 cup warm water. Let sit until foamy, about 10 minutes. Pour into a large bowl and gradually stir in flour and salt. Stir in eggs, zest and the 1/4 cup oil, margarine or butter, if using. Stir in just enough water or water and juice to make a soft and elastic dough. Knead well with a dough hook or by hand on a lightly floured surface until dough is elastic, smooth and shiny. Roll into a ball, place in an oiled bowl and turn to coat. Cover with a damp towel or plastic wrap and let rise in a warm place until doubled, 1 1/2 to 2 hours.

Oil your hands. Divide dough into 20 balls about 2 inches in diameter.

In a deep saucepan or wok, heat 3 inches oil to 365 degrees F. Take a ball of dough, make a hole in center and pull it out to make a doughnut shape. Deep-fry a few at a time until doughnuts are puffed and golden. Using a slotted spoon or skimmer, transfer to paper towels to drain. While still hot, sprinkle with granulated sugar or dip in warm honey. Serve warm.

Makes about 20 doughnuts.
